Holy Moly Guacamole!!!!

My daughter and I put a few things we bought from Sainsbury's together to create a lovely dish using Holy Moly Guacamole.​

We saw the guacamole from Holy Moly and thought YES! A Mexican inspired dish is on the cards. So we made a quick trip over to our local Sainsbury's to pick up a few ingredients to make it happen.

I was speaking to my sister in the States a few days earlier and she was on her way home via Taco Bell and was picking up a chalupa. I wasn't sure what it was and after seeing the picture I decided with my daughter, "Let's do that."

Well, it wasn't exactly the chalupa but it definitely had Mexican flare. I would love to be a professional chef one day, along with being a race car driver, but as a mom of 3 so cook at home is my title for now, I make things off the cuff and come up with a dish at the end!

So Holy Moly Guacamole, what is it? Where is it from? And Why should you go out and buy it?

The guacamole is made from sun-ripened Hass avocados. Not just an average avocado, but an avocado from a family owned orchard in Mexico. The guacamole is dairy free, gluten free and perfect for those who are trying out Veganuary.

What I made is not vegan, but the guacamole is made with handpicked and hand scooped avocados, then combined with chunky fresh tomato, finely chopped red onion, a touch a jalapeño chilli, a squeeze of lime juice, a pinch of salt, peppering of coriander, and a tiny bit of garlic. So as a side for a proper vegan meal, it is perfect.

We tried the original and the spicy, both pleasant. The guacamole was very fresh tasting and light. The texture was not as thick as previous types I have had. Our household preferred the spicy version as it just had that bit more kick to it. Not spicy that it hurts but almost a bell pepper with a kick of flavour, quite tasty indeed!

Our Dish:

500g of Chicken Breast

Ready made latin flavour marinades/Sauces (we used Tangy Tomatillo and Chilli and Lime Combo)

Bell Pepper

Tomatoes

Spring Onion

Coriander

Lemon Pepper

Lime

Chives

Sour Cream

Himalayan Salt

Tortillas or Italian Flat bread

Kids

If not already prepared, slice the chicken breast into strips.

I marinaded the strips in the sauce for a few mins then added them to a frying pan with a small amount of hot olive oil.

Cook until done!

With the tortilla we popped the bag in the microwave according to the directions on the bag. With the Italian flatbread I heated them individually in a dry hot frying pan to get them a slightly crispy.

Now, grab a kid and get them to assemble the dish!

The kid's assembly line consists of:

  • a bowl of chopped tomato, spring onions, coriander, a squeeze of lime, lemon pepper and Himalayan salt! (Mommy's salsa)

  • a bowl of sliced bell peppers

  • a bowl of soured cream

  • a bowl of chopped chives

  • the tubs of Holy Moly Guacamole

With the tortilla or flatbread down first, add the chicken and the kids can add the toppings in which ever order they wish!
